The Flat Iron is cut from the shoulder of the cow (called the chuck) and is nicely marbled with lots of beefy flavors. Because of the marbling, flat iron steak has a rich flavor that is described as "beefy." Although flavorful enough to be enjoyed on its own, this type of cut benefits from a marinade or rub and often takes on the flavors of the ingredients it is combined with.

Pro cooking tips:  In a very hot, oiled cast iron skillet, cook for 4-5 minutes on each side, let rest for another 4-5 minutes. Cut diagonally across the grain into thin strips.
